How: Beef ribs are slow cooked for hours, finished on the grill, brushed with rendered, bone marrow fat, then finished with a relish made from raw snap peas, arugula, horseradish, herb oil and lime.
Why: This is, without a doubt, the best food item at Smorgasburg. Most of the food at Smorgasburg is fantastic, but some of the items relies on its instagrammable nature to drive sales and long lines. Carnal pushes past this and makes an amazing product that takes hours on end to produce.
